June is the busiest time of the year with my job so the blog posts have been few and far between. This weekend was the calmest in a long time so I decided to spend some quality time in the kitchen.

I have a large collection of cookbooks and cooking magazines passed on to me from family and I have to admit that I rarely use more than a select few. One I have been wanting to try is called The Baker’s Bible.

One thing I like to make on a regular basis is bread- all types of bread- white, rye, wheat, sweet, etc. Some people are intimidated by making their own bread but I find it to be relaxing and I like the thought that my bread is made from just flour, water, yeast and sugar and not filled with preservatives.

We love greens- spinach, mustard greens, kale, etc.- and try to eat them at least once a week. I saw this recipe in the Food Network Magazine and decided it sounded like a great recipe to try with the fresh tomatoes and red kale I had bought over the weekend.

The creamy polenta was a great base for the acidic tomatoes and slight bitterness of the red kale. Tangy goat cheese topped off the dish for a perfect addition.

Granola Bars

We LOVE this recipe and make it every 1-2 weeks. It is adapted from The Whole Kitchen’s wonderful recipe.

Granola bars

4 1/2 cups old fashion oats
3/4 cup chopped walnuts
1/2 cup chopped almonds
1 cup dried fruit (raisins, cherries, cranberries, etc)
2/3 cup packed brown sugar
1/8 cup molasses plus enough honey to make 1/2 cup total
4 Tbsp butter
1/2 tsp salt
1 tsp cinnamon
1 Tbsp vanilla extract
