We LOVE this recipe and make it every 1-2 weeks. It is adapted from The Whole Kitchen’s wonderful recipe.
4 1/2 cups old fashion oats
3/4 cup chopped walnuts
1/2 cup chopped almonds
1 cup dried fruit (raisins, cherries, cranberries, etc)
2/3 cup packed brown sugar
1/8 cup molasses plus enough honey to make 1/2 cup total
4 Tbsp butter
1/2 tsp salt
1 tsp cinnamon
1 Tbsp vanilla extract
Put oats and nuts on half a full sheet pan and bake at 350 degrees for 8 minutes (while oven is preheating is fine). When done, stir and return to oven for 7 minutes or until fragrant.
Chop 1 cup dried fruit and put in large glass bowl.
On stove combine 2/3 cup packed brown sugar, 1/8 cup molasses plus enough honey to make 1/2 cup (see photo), 4 Tbsp butter, 1/2 tsp salt, 1 tsp cinnamon.
Bring to simmer and remove from heat and add 1 Tbsp. vanilla extract.
Add roasted nuts and oats and liquids to glass bowl with chopped fruit. Combine well.
Spray cookie sheet (can reuse one from oats and nuts) with non-stick cooking spray or line with parchment paper. Press mixture into sheet and bake for 5 minutes.
Cool and flip onto surface to cut into bars.
We keep in a large container in fridge and grab for snack or throw into a bag for work, road trips, bike rides, hikes, etc.
